웃 Pat: This night market is really huge!
Tiffany: Yes, Shilin Night Market (士林夜市) is the biggest one in Taipei. It first opened over 100 years ago when peddlers settled in this neighborhood.

웃 Pat: I see. No wonder there are so many food stands here.
Tiffany: I think we can start with fried chicken steak (雞排). Do you see those people standing in line?

웃 Pat: Wow, the line is so long! It must be very good.
Tiffany: Exactly. Fried chicken steak is one of the most famous foods in this night market.

웃 Pat: You can tell me more about it as we line up.
Tiffany: Wait, we should get a drink first. You’ll need something to wash down the food.

웃 Pat: Then what do you suggest?
Tiffany: There’s a vendor there selling sugar cane juice. We can grab one each and get in line.

웃 Pat: What’s this we’re eating now? It tastes so good.
Tiffany: It’s an oyster omelet (蚵仔煎). To be honest, I think the ones in myhometown are better.

웃 Pat: Oh, you’re not from Taipei?
Tiffany: No, I’m from Kaohsiung, a large city in the south. There’s a big night market called Liouhe (六合夜市).

웃 Pat: How is the food there different from that in Shilin Night Market?
Tiffany: Well, many of the dishes are slightly sweet. In southern Taiwan, people prefer to use sugar rather than salt to flavor food.

웃 Pat: How interesting! Kaohsiung is on the coast, isn’t it? There must be lots of seafood dishes.
Tiffany: You’re right. One of the most popular is seafood congee (海鮮粥).

웃 Pat: I hope I can visit Kaohsiung and give that a try.
Tiffany: I’d be more than happy to show you around my city.
